CA 239 - Custards and Frozen Desserts

Lecture - Lab - Credit Hours: 3-2-4
Students will produce various cooked creams, baked custards, Bavarians, mousses, ice creams and frozen desserts. Emphasis on production, speed, and proper sanitation and presentation will be stressed.
