The Culinary Arts Management Food Preparation CCO at JJC is designed to introduce students to concepts, techniques and strategies involved in food preparation and production, cost control concepts, baking and pastry principles, food service sanitation, customer and dining room service, product fabrication and purchasing activities. The Food Preparation CCOcombines practical and theoretical facets of the industry, introducing students to many valuable concepts and applications used in the industry today. The Food Preparation CCO also provides for a seamless transition into the Culinary Arts Management AAS Degree in the event a student decides to ultimately pursue the associates of applied science degree.
